Guacamole and Chips

I think guacamole and chips are the perfect snack at anytime. I found this "perfect guacamole" recipe on Simply Recipes. It really is perfect! ;-)

Paz

Here’s the recipe:
The Perfect Guacamole
Simply Recipes

2 ripe avocados
½ red onion, minced (about 1/2 cup)
1-2 serrano chiles, stems and seeds removed, minced
2 tablespoons cilantro leaves, finely chopped
1 tablespoon of fresh lime or lemon juice
1/2 teaspoon coarse salt
A dash of freshly grated black pepper
1/2 ripe tomato, seeds and pulp removed, chopped
Garnish with red radishes or jicama.

Serve with tortilla chips.

Cut avocados in half. Remove seed. Scoop out avocado from the peel, put in a mixing bowl.
Using a fork, mash the avocado. Add the chopped onion, cilantro, lime or lemon, salt and pepper and mash some more.

Chili peppers vary individually in their hotness. So, start with a half of one chili pepper and add to the guacamole to your desired degree of hotness. Be careful handling the peppers; wash your hands thoroughly after handling and do not touch your eyes or the area near your eyes with your hands for several hours.

Keep the tomatoes separate until ready to serve.

Remember that much of this is done to taste because of the variability in the fresh ingredients. Start with this recipe and adjust to your taste.

Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready.

Just before serving, add the chopped tomato to the guacamole and mix.

Serves 2-4

Paz,
I cannot find Haas Avocados here and so really miss great guacomole. I will be sure to have my fill when I head back to the States for vacation next spring.

Chips and guacamole are a staple here in the Texas diet. Don't you just love the fresh flavor of cilantro? Looks like a good recipe and great picture as usual!

Sounds delicious, Paz - I don't have guacamole very often, so when I do, it's a real treat! I'll have to give this a try sometime!

And yours look so perfect! I love that it retained its green colour. You know, guacamole is one of my fave dips and i could sit in one corner with a bag of chips until it's all gone! :)

Nice job Paz!

I agree Paz! Guacamole is one of my favorite summertime dishes - this is very close to the recipe I use. Your picture is great too - very nice presentation. Do you know if there's any stock to that "stick the seed in the middle to keep it from turning brown" thing?

Hi there Michelle! How are ya? I have no idea about the saying you've mentioned. Actually, this is the first time I'm hearing about it. If I remember I'll try it and see if it works. ;-)

Hey there, Jasmine! Nummy, nummy is right! I love the sound of your sandwich. I hope you put it up on your blog, so I can follow the recipe. I'm hungry already!

Hi Mandira: I have a feeling your avocada was very tasty. ;-)

Hi Ellie: I don't have this snack often but I love it! ;-) I should have it more often.

Hi there, Sra: I'm glad you succumbed! LOL! Your blog already features some tasty looking food!

Hi Paz,
So glad you like it! We are guacamole fiends here, though usually I just eat the straight avocado, pitted with a squeeze of lemon. My number one favorite food in the whole world.

Hey, I love my guacamole with tomatoes, too! My Colombian friends say that their mothers leave the avocado stone in the guacamole to keep it from browning. Have you ever heard of that?

Hi Elise and welcome! Thanks for all the wonderful recipes you post. Hmmm... I'm going to have to try eating avocado with a squeeze of lemon. That sounds just right!

Hi there, Sra: I'd be very honored and I've linked yours, if it's okay.

Hi Pille: Oh, wow! I haven't heard of leaving the stone in the guacamole. This another practice I'll have to try to see if it works.
