Weekend Herb Blogging #15 - Tomatoes

Tomatoes are the subject of my Weekend Herb Blog.

Peixe com mollo de tomate is Portuguese for Fish with Tomato Sauce. I got this recipe from Grace who lives in Angola (Southwestern Africa). She writes that it’s a similar sauce to what they have in the Philippines called sarciado, which includes eggs.

I liked the simplicity of this recipe – fish, tomatoes, onions, garlic, and tomato paste. After making and eating it, I realized that I’ve tasted this type of sauce many times before in West African cooking. It goes perfectly with white rice.

Since Grace’s recipe doesn’t specify a fish fillet type, I used tilapia fillets. My additions to the recipe included hot sauce (I like spicy food) and a handful of chopped Italian flat parsley (I wanted to see some green).

This looks delicious. Paz, I wish I could come to your house for dinner. (Maybe someday, I do have some friends in New York that I visit once in a while.) I love tomatoes in any form, and apparently they are quite good for you too. Hey, small world, I just sent Grace the link so she can put herself on the world map of food bloggers. There are hardly any food bloggers in Africa.

Incidentally, I'm making a similar mollo de tomate from Togo (also W. Africa) tonight! It is fresh tomatoes pureed with ginger, garlic, pepper, onion and tomato paste.

Paz, this is a favourite combo! Love fish sarsiado and yes, this is very similar. Great addition of chillies! Yummmmmmmmy...

Hi Paz,

I love sarsiado and tomato is just simple way to eat with salt as a dip...We used scad fish for our sarsiado in the Philippines.. I never try tilapia but how does it taste like?
